- Cooked rice - 1 cup
- Firm tofu - 200 grams, crumbled
- Water - 200 ml
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Carrot - 1 small, grated
- Spinach - 1 cup, chopped
- Garlic - 2 cloves, minced
- Salt - to taste
- Pepper - to taste
Steps
- In a medium bowl, mix the crumbled tofu with water, soy sauce, sesame oil, garlic, salt, and pepper until well combined.
- In a non-stick pan, sauté the chopped green onions and grated carrot over medium heat for about 3 minutes until softened.
- Add the chopped spinach to the pan and cook for an additional 2 minutes until wilted.
- Pour the tofu mixture into the pan with the sautéed vegetables, and stir gently to combine.
- Cover the pan with a lid and reduce the heat to low, cooking for about 15 minutes until the tofu is heated through and slightly firm.
- Serve the tofu mixture over warm cooked rice, garnished with additional green onions if desired.
