Ingredients

  • Cooked rice - 1 cup
  • Firm tofu - 200 grams, crumbled
  • Water - 200 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Carrot - 1 small, grated
  • Spinach - 1 cup, chopped
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a medium bowl, mix the crumbled tofu with water, soy sauce, sesame oil, garlic, salt, and pepper until well combined.
  2. In a non-stick pan, sauté the chopped green onions and grated carrot over medium heat for about 3 minutes until softened.
  3. Add the chopped spinach to the pan and cook for an additional 2 minutes until wilted.
  4. Pour the tofu mixture into the pan with the sautéed vegetables, and stir gently to combine.
  5. Cover the pan with a lid and reduce the heat to low, cooking for about 15 minutes until the tofu is heated through and slightly firm.
  6. Serve the tofu mixture over warm cooked rice, garnished with additional green onions if desired.
