Ingredients

  • Eggs - 4 large
  • Vegetable broth - 200 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2 tablespoons, finely chopped
  • Carrot - 1/4 cup, finely diced
  • Zucchini - 1/4 cup, finely diced
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, whisk together the eggs, vegetable broth, soy sauce, sesame oil, salt, and pepper until well combined.
  2. Add the finely chopped green onions, diced carrot, and zucchini to the egg mixture and stir gently.
  3. Pour the egg mixture into a heatproof bowl or a shallow dish that fits into a steamer.
  4. Prepare a steamer by bringing water to a boil. Once boiling, reduce to a simmer.
  5. Place the bowl with the egg mixture into the steamer and cover with a lid.
  6. Steam the egg mixture for about 20-25 minutes, or until the eggs are set and fluffy.
  7. Remove from the steamer, let it cool for a minute, then carefully serve warm.
