Ingredients
- Water - 500 ml
- Eggs - 4 large
- Tofu (soft) - 150 g, cubed
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Korean red pepper flakes (gochugaru) - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Zucchini - 100 g, sliced
- Mushrooms (shiitake or button) - 100 g, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, bring 500 ml of water to a boil over medium heat.
- Add the minced garlic, soy sauce, and Korean red pepper flakes to the boiling water.
- Add the cubed tofu, sliced zucchini, and mushrooms to the pot. Simmer for about 5 minutes until the vegetables are tender.
- In a separate bowl, beat the eggs and season with salt and black pepper.
- Slowly pour the beaten eggs into the pot in a circular motion, stirring gently to create ribbons of egg.
- Add the chopped green onions and drizzle sesame oil over the top.
- Remove from heat and let it sit for a couple of minutes before serving.
