Ingredients
- Cauliflower rice - 200 grams
- Eggs - 4 large
- Green onions - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the cauliflower rice and cook for 5 minutes, stirring occasionally until tender.
- In a bowl, whisk together the eggs, coconut aminos, salt, and black pepper.
- Push the cauliflower rice to the side of the skillet and pour the egg mixture into the empty side.
- Scramble the eggs gently until just set, then mix them with the cauliflower rice.
- Add the chopped green onions and drizzle with sesame oil, tossing everything together.
- Remove from heat and serve immediately.
