Ingredients

  • Cauliflower rice - 200 grams
  • Eggs - 4 large
  • Green onions - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the cauliflower rice and cook for 5 minutes, stirring occasionally until tender.
  4. In a bowl, whisk together the eggs, coconut aminos, salt, and black pepper.
  5. Push the cauliflower rice to the side of the skillet and pour the egg mixture into the empty side.
  6. Scramble the eggs gently until just set, then mix them with the cauliflower rice.
  7. Add the chopped green onions and drizzle with sesame oil, tossing everything together.
  8. Remove from heat and serve immediately.
