- Carrot, julienned - 1 medium
- Zucchini, julienned - 1 medium
- Bell pepper, thinly sliced - 1 medium
- Lemon juice - 1 tablespoon

- Sesame seeds - 1 tablespoon
Steps
- In a bowl, combine soy sauce, sesame oil, minced garlic, ginger, lemon juice, salt, and black pepper to create the marinade.
- Place the white fish fillets in the marinade and let them sit for about 15 minutes to absorb the flavors.
- While the fish is marinating, prepare the vegetables by julienning the carrot and zucchini, and slicing the bell pepper and spring onions.
- Heat a non-stick skillet over medium heat and add a teaspoon of sesame oil.
- Once the oil is hot, add the marinated fish fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily.
- Remove the fish from the skillet and set aside.
- In the same skillet, add the carrot, zucchini, and bell pepper, stir-frying for about 3-5 minutes until just tender but still crisp.
- Plate the fish and top with the sautéed vegetables. Garnish with chopped spring onions and sesame seeds before serving.
