- Sweet rice flour (glutinous rice flour) - 100 grams
- Granulated sugar - 30 grams
- Baking powder - 1 teaspoon
- Salt - a pinch
- Water - 150 milliliters
- Red bean paste - 80 grams
- Vegetable oil - 1 tablespoon
- Sesame seeds - 1 tablespoon (for topping)
Steps
- In a mixing bowl, combine the sweet rice flour, sugar, baking powder, and salt.
- Gradually add water to the dry ingredients and mix until a smooth batter forms.
- Heat a non-stick pan over medium heat and lightly grease it with vegetable oil.
- Pour a small amount of batter (about 2 tablespoons) into the pan to form a small pancake.
- Cook for about 2-3 minutes on one side until bubbles start to form, then flip and cook for another 2-3 minutes until golden brown.
- Repeat the process with the remaining batter, adjusting the heat as necessary to prevent burning.
- Once all the pancakes are cooked, take one pancake and place a spoonful of red bean paste in the center, then fold the pancake over to create a half-moon shape.
- Press the edges gently to seal and sprinkle sesame seeds on top.
