Ingredients

  • Sweet rice flour (glutinous rice flour) - 100 grams
  • Granulated sugar - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - a pinch
  • Water - 150 milliliters
  • Red bean paste - 80 grams
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. In a mixing bowl, combine the sweet rice flour, sugar, baking powder, and salt.
  2. Gradually add water to the dry ingredients and mix until a smooth batter forms.
  3. Heat a non-stick pan over medium heat and lightly grease it with vegetable oil.
  4. Pour a small amount of batter (about 2 tablespoons) into the pan to form a small pancake.
  5. Cook for about 2-3 minutes on one side until bubbles start to form, then flip and cook for another 2-3 minutes until golden brown.
  6. Repeat the process with the remaining batter, adjusting the heat as necessary to prevent burning.
  7. Once all the pancakes are cooked, take one pancake and place a spoonful of red bean paste in the center, then fold the pancake over to create a half-moon shape.
  8. Press the edges gently to seal and sprinkle sesame seeds on top.
