  • Red bell pepper - 1 medium, sliced

  • Sesame oil - 2 tablespoons
  • Gluten-free soy sauce - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Green onions - 2, chopped
  • Salt - to taste

  • Sesame seeds - 1 tablespoon

Steps

  1. Start by preparing the fish fillets; pat them dry and season with salt and black pepper on both sides.
  2. In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
  3. Add the sliced zucchini, julienned carrot, and red bell pepper to the skillet. Stir-fry the vegetables for about 5-7 minutes until they are tender but still crisp.
  4. Push the vegetables to one side of the skillet and add the seasoned fish fillets to the other side. Cook the fish for about 3-4 minutes on each side or until cooked through and flaky.
  5. Drizzle the gluten-free soy sauce and lemon juice over the fish and vegetables. Toss everything together gently to combine and heat through for another minute.
  6. Remove from heat, garnish with chopped green onions and sesame seeds before serving.
