- Shrimp - 100 grams, peeled and deveined
- Squid - 100 grams, cleaned and sliced
- Green onion - 2 stalks, chopped
- Carrot - 1 small, grated
- Zucchini - 1 small, grated
- Chickpea flour - 100 grams
- Rice flour - 50 grams
- Water - 150 ml
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the chickpea flour, rice flour, salt, and black pepper.
- Add the water gradually while whisking until you achieve a smooth batter.
- Incorporate the egg into the batter and mix well.
- Fold in the shrimp, squid, green onion, carrot, and zucchini until evenly coated.
- Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
- Pour half of the batter mixture into the skillet, spreading it out evenly.
- Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
- Repeat with the remaining batter to make a second pancake.
- Once cooked, transfer the pancakes to a plate lined with paper towels to absorb excess oil.
- Serve hot with dipping sauce made from soy sauce and vinegar.
