Ingredients

  • Shrimp - 100 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Green onion - 2 stalks, chopped
  • Carrot - 1 small, grated
  • Zucchini - 1 small, grated
  • Chickpea flour - 100 grams
  • Rice flour - 50 grams
  • Water - 150 ml
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine the chickpea flour, rice flour, salt, and black pepper.
  2. Add the water gradually while whisking until you achieve a smooth batter.
  3. Incorporate the egg into the batter and mix well.
  4. Fold in the shrimp, squid, green onion, carrot, and zucchini until evenly coated.
  5. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
  6. Pour half of the batter mixture into the skillet, spreading it out evenly.
  7. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
  8. Repeat with the remaining batter to make a second pancake.
  9. Once cooked, transfer the pancakes to a plate lined with paper towels to absorb excess oil.
  10. Serve hot with dipping sauce made from soy sauce and vinegar.
