Steps
- Cut the fish fillets into bite-sized pieces and season lightly with salt and pepper.
- In a bowl, beat the egg and combine it with the cornstarch to form a batter.
- Dip each piece of fish into the batter, ensuring it is well-coated.
- Heat vegetable oil in a deep pan over medium heat. Once hot, fry the fish pieces until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
- In another pan, add a little oil and sauté the garlic and ginger until fragrant, about 30 seconds.
- Add the julienned vegetables (carrot, red and green bell peppers, and onion) and stir-fry for about 3-4 minutes until slightly softened.
- In a small bowl, mix soy sauce, rice vinegar, sugar, water, and cornstarch until smooth.
- Pour the sauce mixture over the sautéed vegetables, stirring continuously until the sauce thickens, about 2 minutes.
- Add the fried fish to the pan and gently toss to coat with the sauce.
- Drizzle with sesame oil and garnish with chopped green onion before serving.
