Ingredients

  • White fish fillets (like cod or halibut) - 200 grams
  • Cornstarch - 60 grams
  • Egg - 1 large
  • Vegetable oil - 250 ml (for frying)
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Green bell pepper - 1 medium, julienned
  • Onion - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Sugar - 1 tablespoon
  • Water - 100 ml
  • Sesame oil - 1 teaspoon
  • Cornstarch (for thickening) - 1 tablespoon
  • Green onion - 1 stalk, chopped (for garnish)

Steps

  1. Cut the fish fillets into bite-sized pieces and season lightly with salt and pepper.
  2. In a bowl, beat the egg and combine it with the cornstarch to form a batter.
  3. Dip each piece of fish into the batter, ensuring it is well-coated.
  4. Heat vegetable oil in a deep pan over medium heat. Once hot, fry the fish pieces until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
  5. In another pan, add a little oil and sauté the garlic and ginger until fragrant, about 30 seconds.
  6. Add the julienned vegetables (carrot, red and green bell peppers, and onion) and stir-fry for about 3-4 minutes until slightly softened.
  7. In a small bowl, mix soy sauce, rice vinegar, sugar, water, and cornstarch until smooth.
  8. Pour the sauce mixture over the sautéed vegetables, stirring continuously until the sauce thickens, about 2 minutes.
  9. Add the fried fish to the pan and gently toss to coat with the sauce.
  10. Drizzle with sesame oil and garnish with chopped green onion before serving.
