Ingredients

  • Fresh oysters - 12 pieces
  • Water - 500 ml
  • Kombu (dried kelp) - 10 g
  • Soy sauce (kosher) - 30 ml
  • Rice vinegar - 15 ml
  • Sesame oil - 10 ml
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 5 g
  • Chili flakes - 1 teaspoon
  • Green onion (sliced) - 1 stalk
  • Cilantro (for garnish) - a handful

Steps

  1. In a pot, combine water and kombu, and bring to a simmer over medium heat. Let it infuse for about 10 minutes.
  2. Remove the kombu and bring the water to a gentle boil. Carefully add the fresh oysters and poach for about 3-4 minutes until they are just cooked through.
  3. While the oysters are poaching, prepare the dipping sauce by mixing soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and chili flakes in a small bowl.
  4. Once the oysters are done, use a slotted spoon to remove them from the pot and place them on a serving plate.
  5. Drizzle the dipping sauce over the oysters and garnish with sliced green onion and cilantro.
  6. Serve immediately with additional dipping sauce on the side.
