- Fresh oysters - 12 pieces
- Water - 500 ml
- Kombu (dried kelp) - 10 g
- Soy sauce (kosher) - 30 ml
- Rice vinegar - 15 ml
- Sesame oil - 10 ml
- Garlic (minced) - 1 clove
- Ginger (grated) - 5 g
- Chili flakes - 1 teaspoon
- Green onion (sliced) - 1 stalk
- Cilantro (for garnish) - a handful
Steps
- In a pot, combine water and kombu, and bring to a simmer over medium heat. Let it infuse for about 10 minutes.
- Remove the kombu and bring the water to a gentle boil. Carefully add the fresh oysters and poach for about 3-4 minutes until they are just cooked through.
- While the oysters are poaching, prepare the dipping sauce by mixing soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and chili flakes in a small bowl.
- Once the oysters are done, use a slotted spoon to remove them from the pot and place them on a serving plate.
- Drizzle the dipping sauce over the oysters and garnish with sliced green onion and cilantro.
- Serve immediately with additional dipping sauce on the side.
