Ingredients
- Sweet potato starch noodles - 100g
- Fresh oysters - 150g
- Shrimp, peeled and deveined - 100g
- Lettuce leaves, shredded - 30g
- Cucumber, julienned - 50g
- Daikon radish, pickled - 50g
- Sesame oil - 1 tablespoon
- Soy sauce (gluten-free) - 1 tablespoon
- Vinegar - 1 tablespoon
- Korean red pepper flakes - 1 teaspoon
- Ice cubes - 1 cup
- Water - 500ml
- Salt - to taste
- Green onion, chopped - 1 tablespoon
Steps
- Bring 500ml of water to a boil in a pot. Add sweet potato starch noodles and cook for 6-8 minutes or until they become translucent and tender.
- While the noodles are cooking, prepare an ice bath in a bowl by filling it with cold water and ice cubes.
- Once the noodles are cooked, drain them and immediately transfer them to the ice bath to stop the cooking process. Let them sit for 5 minutes, then drain again and set aside.
- In a separate pot, bring water to a boil and add the shrimp and oysters. Cook for 2-3 minutes until shrimp are pink and oysters are just cooked. Remove and set aside.
- In a bowl, mix sesame oil, gluten-free soy sauce, vinegar, Korean red pepper flakes, and a pinch of salt to create the dressing.
- In serving bowls, divide the cold noodles and top with cooked shrimp, oysters, shredded lettuce, julienned cucumber, and pickled daikon radish.
- Drizzle the dressing over the top and garnish with chopped green onions. Serve immediately with additional ice cubes if desired.
