Ingredients

  • Fish stock - 500 ml
  • Shrimp - 200 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Red pepper flakes - 1 teaspoon (adjust to taste)
  • Salt - to taste
  • Black pepper - to taste
  • Lettuce leaves - for serving

Steps

  1. In a pot, heat the fish stock over medium heat until it starts to simmer.
  2. Add minced garlic, grated ginger, soy sauce, sesame oil, and red pepper flakes to the simmering stock.
  3. Once the broth is fragrant, add the shrimp and squid to the pot and cook for 3-4 minutes until the seafood is cooked through.
  4. Add the sliced mushrooms and chopped green onions, cooking for an additional 2-3 minutes.
  5. Season the soup with salt and black pepper to taste.
  6. Serve the Gul Guk hot in bowls with fresh lettuce leaves on the side for wrapping.
