Ingredients
- Whole wheat noodles - 200 grams
- Vegetable broth - 500 milliliters
- Tofu (firm) - 150 grams, cubed
- Spinach - 100 grams, fresh
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, sliced
- Garlic - 3 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Red pepper flakes - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, bring the vegetable broth to a boil.
- Add the whole wheat noodles to the boiling broth and cook according to package instructions, usually about 8-10 minutes.
- While the noodles are cooking, heat sesame oil in a pan over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Add cubed tofu and cook until golden brown on all sides, about 5-7 minutes.
- Stir in the julienned carrot and cook for another 3 minutes.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Once the noodles are cooked, drain and add them to the pan with tofu and vegetables.
- Pour in soy sauce and sprinkle with red pepper flakes, stirring well to combine.
- Season with salt and pepper to taste, and cook for an additional 2 minutes to heat through.
- Serve hot, garnished with sliced green onions.
