Ingredients

  • Whole wheat noodles - 200 grams
  • Vegetable broth - 500 milliliters
  • Tofu (firm) - 150 grams, cubed
  • Spinach - 100 grams, fresh
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, sliced
  • Garlic - 3 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Red pepper flakes - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, bring the vegetable broth to a boil.
  2. Add the whole wheat noodles to the boiling broth and cook according to package instructions, usually about 8-10 minutes.
  3. While the noodles are cooking, heat sesame oil in a pan over medium heat.
  4. Add minced garlic and sauté for about 1 minute until fragrant.
  5. Add cubed tofu and cook until golden brown on all sides, about 5-7 minutes.
  6. Stir in the julienned carrot and cook for another 3 minutes.
  7. Add fresh spinach and cook until wilted, about 2 minutes.
  8. Once the noodles are cooked, drain and add them to the pan with tofu and vegetables.
  9. Pour in soy sauce and sprinkle with red pepper flakes, stirring well to combine.
  10. Season with salt and pepper to taste, and cook for an additional 2 minutes to heat through.
  11. Serve hot, garnished with sliced green onions.
