Ingredients
- Zucchini - 2 medium (about 300g)
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 teaspoon
- Korean red pepper flakes (gochugaru) - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Kimchi - 100g, chopped
- Carrot - 1 small, julienned
- Cabbage - 1 cup, thinly sliced
- Rice vinegar - 1 tablespoon
- Maple syrup - 1 teaspoon
- Sesame seeds - 1 tablespoon
Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the zucchini into 1 cm thick rounds and place in a bowl.
- In a small bowl, whisk together olive oil, garlic powder, soy sauce, sesame oil, gochugaru, salt, and black pepper.
- Pour the marinade over the zucchini slices and toss to coat evenly. Let it marinate for 10 minutes.
- While the zucchini is marinating, prepare the kimchi slaw by mixing chopped kimchi, julienned carrot, and sliced cabbage in a bowl.
- In a separate small bowl, whisk together rice vinegar and maple syrup, then pour over the slaw mixture. Toss well to combine.
- Grill the marinated zucchini slices for about 4-5 minutes per side, or until they are tender and have nice grill marks.
- Toast the burger buns on the grill for 1-2 minutes until lightly golden.
- Assemble the burgers by placing grilled zucchini on the bottom half of each bun, topping with the kimchi slaw, and sprinkling sesame seeds on top.
- Cover with the top half of the bun and serve immediately.
