Ingredients

- Mushrooms (shiitake or button) - 200 grams, whole or halved
- Cherry tomatoes - 200 grams
- Red onion - 1 small, cut into wedges
- Sesame oil - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Soy sauce - 1 tablespoon
- Maple syrup - 1 teaspoon
- Garlic - 2 cloves, minced
- Black sesame seeds - 1 teaspoon (for garnish)
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes prior)
Steps
- In a bowl, combine sesame oil, gochujang, soy sauce, maple syrup, and minced garlic to create a marinade.
- Add all the chopped vegetables (zucchini, bell pepper, mushrooms, cherry tomatoes, and red onion) to the marinade and toss well to coat. Let it marinate for at least 15 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated vegetables onto the skewers, alternating between different types for variety.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
- Once done, remove from the grill and sprinkle with black sesame seeds before serving.
