Ingredients

  • Zucchini - 1 medium, sliced into thick rounds

  • Cherry tomatoes - 200 grams
  • Red onion - 1 small, cut into wedges
  • Sesame oil - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Black sesame seeds - 1 teaspoon (for garnish)
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes prior)

Steps

  1. In a bowl, combine sesame oil, gochujang, soy sauce, maple syrup, and minced garlic to create a marinade.
  2. Add all the chopped vegetables (zucchini, bell pepper, mushrooms, cherry tomatoes, and red onion) to the marinade and toss well to coat. Let it marinate for at least 15 minutes.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated vegetables onto the skewers, alternating between different types for variety.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
