- Firm tofu - 300 grams
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Maple syrup - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Rice vinegar - 1 tablespoon
- Cornstarch - 2 tablespoons
- Bell peppers - 1 medium, cut into chunks
- Red onion - 1 small, cut into chunks
- Zucchini - 1 small, sliced
- Skewers - 4 (soaked in water if wooden)
Steps
- Press the tofu for 20 minutes to remove excess moisture, then cut it into 2.5 cm cubes.
- In a bowl, mix together the soy sauce, sesame oil, maple syrup, minced garlic, grated ginger, and rice vinegar to create the marinade.
- Add the tofu cubes to the marinade, ensuring they are well-coated, and let them marinate for at least 15 minutes.
- While the tofu is marinating, prepare the vegetables by cutting them into chunks.
- Preheat a grill or grill pan over medium-high heat.
- Toss the marinated tofu cubes in cornstarch to create a light coating for crispiness.
- On each skewer, alternate threading the marinated tofu, bell peppers, red onion, and zucchini.
- Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
- Serve hot with extra marinade drizzled on top or with a side of rice.
