Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Rice vinegar - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Bell peppers - 1 medium, cut into chunks
  • Red onion - 1 small, cut into chunks
  • Zucchini - 1 small, sliced
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. Press the tofu for 20 minutes to remove excess moisture, then cut it into 2.5 cm cubes.
  2. In a bowl, mix together the soy sauce, sesame oil, maple syrup, minced garlic, grated ginger, and rice vinegar to create the marinade.
  3. Add the tofu cubes to the marinade, ensuring they are well-coated, and let them marinate for at least 15 minutes.
  4. While the tofu is marinating, prepare the vegetables by cutting them into chunks.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Toss the marinated tofu cubes in cornstarch to create a light coating for crispiness.
  7. On each skewer, alternate threading the marinated tofu, bell peppers, red onion, and zucchini.
  8. Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
  9. Serve hot with extra marinade drizzled on top or with a side of rice.
