- Beef small intestines (gopchang) - 300 grams
- Beef broth - 500 ml
- Water - 200 ml
- Soy sauce - 2 tablespoons
- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Garlic - 4 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 4 stalks, chopped
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Tofu - 150 grams, cubed
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Clean the beef intestines thoroughly under running water, then cut them into 5 cm pieces.
- In a pot, heat sesame oil over medium heat, then add minced garlic and ginger, sautéing until fragrant.
- Add the cleaned gopchang to the pot and cook for about 5 minutes, stirring occasionally.
- Pour in the beef broth and water, then stir in soy sauce, gochugaru, salt, and pepper.
- Bring the mixture to a boil, then reduce to a simmer and cook for an additional 10 minutes.
- Add the mushrooms, carrot, zucchini, and tofu to the pot, then simmer for another 10 minutes until the vegetables are tender.
- Finally, stir in the chopped green onions and cook for 2 more minutes before serving.
