- Beef small intestines (gopchang) - 300 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Honey - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green onions, chopped - 2 stalks
- Lettuce leaves - 4 leaves
- Sliced cucumber - 100 grams
- Kimchi - 100 grams
Steps
- Clean the gopchang thoroughly under cold running water, removing any excess fat or impurities.
- In a bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, gochugaru, honey, and black pepper to make the marinade.
- Add the cleaned gopchang to the marinade, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Once hot, place the marinated gopchang on the grill, cooking for about 4-5 minutes on each side until they are nicely charred and cooked through.
- While grilling, prepare the dipping sauce by mixing chopped green onions with a little soy sauce and sesame oil in a small bowl.
- Serve the grilled gopchang hot with lettuce leaves, sliced cucumber, and kimchi on the side. Use the lettuce to wrap the gopchang with cucumber and dipping sauce.
