Ingredients

  • beef small intestines - 300 grams
  • water - 1 liter
  • salt - 2 teaspoons
  • black pepper - 1 teaspoon
  • sesame oil - 1 tablespoon
  • garlic - 3 cloves, minced
  • gochujang (Korean chili paste) - 1 tablespoon
  • soy sauce - 2 tablespoons
  • green onion - 2 stalks, chopped
  • sesame seeds - 1 teaspoon, toasted

Steps

  1. Rinse the beef intestines thoroughly under cold water to remove any impurities.
  2. In a pot, bring 1 liter of water to a boil and add 2 teaspoons of salt.
  3. Once boiling, add the intestines and simmer for 10 minutes to parboil them.
  4. Remove the intestines from the pot and let them cool slightly, then cut them into 5 cm pieces.
  5. In a bowl, mix together sesame oil, minced garlic, gochujang, soy sauce, and black pepper to create a marinade.
  6. Add the intestines to the marinade, ensuring they are well-coated, and let them marinate for 15 minutes.
  7. Preheat a grill or grill pan over medium-high heat.
  8. Grill the marinated intestines for about 5-7 minutes on each side until they are crispy and cooked through.
  9. Serve hot, garnished with chopped green onions and toasted sesame seeds.
