- Soy milk - 500 ml
- Thin wheat noodles (guksu) - 150 g
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, toasted
Steps
- Cook the thin wheat noodles in boiling water according to package instructions, usually around 4-5 minutes, until al dente. Drain and rinse under cold water to stop cooking.
- In a bowl, combine the soy milk, sesame oil, soy sauce, salt, and black pepper. Mix well to create the broth.
- Divide the cooked noodles into two serving bowls.
- Pour the prepared soy milk broth over the noodles in each bowl.
- Top with the julienned cucumber and carrot, and sprinkle with chopped green onions and toasted sesame seeds.
- Serve immediately, garnished with additional sesame seeds if desired.
