Ingredients

  • Soy milk - 500 ml
  • Thin wheat noodles (guksu) - 150 g
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Cook the thin wheat noodles in boiling water according to package instructions, usually around 4-5 minutes, until al dente. Drain and rinse under cold water to stop cooking.
  2. In a bowl, combine the soy milk, sesame oil, soy sauce, salt, and black pepper. Mix well to create the broth.
  3. Divide the cooked noodles into two serving bowls.
  4. Pour the prepared soy milk broth over the noodles in each bowl.
  5. Top with the julienned cucumber and carrot, and sprinkle with chopped green onions and toasted sesame seeds.
  6. Serve immediately, garnished with additional sesame seeds if desired.
