Ingredients
- Barley - 100 grams
- Chicken breast - 200 grams
- Carrot - 1 medium, diced
- Spinach - 100 grams, blanched
- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon for garnish
Steps
- Rinse the barley under cold water and then cook it in a pot with 300 ml of water. Bring to a boil, reduce heat, and simmer for about 30 minutes or until tender.
- While the barley is cooking, heat sesame oil in a large pan over medium heat. Add minced garlic and sauté until fragrant.
- Add the diced chicken breast to the pan, season with salt and pepper, and cook until the chicken is no longer pink, roughly 5-7 minutes.
- Stir in the diced carrot and mushrooms, cooking for an additional 5 minutes until the vegetables are tender.
- Once the chicken and vegetables are cooked, add the blanched spinach and soy sauce to the pan. Mix well and cook for another 2-3 minutes.
- Once the barley is cooked, drain any excess water and divide it into two bowls. Top each bowl with the chicken and vegetable mixture.
- Garnish with chopped green onions and sesame seeds before serving.
