Ingredients

  • Barley - 100 grams
  • Chicken breast - 200 grams
  • Carrot - 1 medium, diced
  • Spinach - 100 grams, blanched
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon for garnish

Steps

  1. Rinse the barley under cold water and then cook it in a pot with 300 ml of water. Bring to a boil, reduce heat, and simmer for about 30 minutes or until tender.
  2. While the barley is cooking, heat sesame oil in a large pan over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the diced chicken breast to the pan, season with salt and pepper, and cook until the chicken is no longer pink, roughly 5-7 minutes.
  4. Stir in the diced carrot and mushrooms, cooking for an additional 5 minutes until the vegetables are tender.
  5. Once the chicken and vegetables are cooked, add the blanched spinach and soy sauce to the pan. Mix well and cook for another 2-3 minutes.
  6. Once the barley is cooked, drain any excess water and divide it into two bowls. Top each bowl with the chicken and vegetable mixture.
  7. Garnish with chopped green onions and sesame seeds before serving.
