- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Spinach - 100 grams, fresh
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2 stalks, chopped
- Black sesame seeds - 1 teaspoon (for garnish)

Steps
- Rinse the short-grain rice under cold water until the water runs clear, then drain.
- In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add the sliced mushrooms, julienned carrot, and zucchini to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Pour in the vegetable broth and soy sauce, and bring to a gentle simmer. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and black pepper to taste.
- Once the rice is cooked, fluff it with a fork and divide it between two bowls.
- Ladle the vegetable broth and sautéed vegetables over the rice. Garnish with chopped green onions and black sesame seeds before serving.
