Ingredients

  • Short-grain rice - 1 cup
  • Water - 2 cups
  • Vegetable broth - 1 cup
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Spinach - 100 grams, fresh
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Black sesame seeds - 1 teaspoon (for garnish)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is cooked and water is absorbed.
  3. While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  4. Add the sliced mushrooms, julienned carrot, and zucchini to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
  5. Pour in the vegetable broth and soy sauce, and bring to a gentle simmer. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and black pepper to taste.
  6. Once the rice is cooked, fluff it with a fork and divide it between two bowls.
  7. Ladle the vegetable broth and sautéed vegetables over the rice. Garnish with chopped green onions and black sesame seeds before serving.
