- Tofu (firm) - 150 grams, diced
- Zucchini - 100 grams, sliced
- Carrot - 50 grams, julienned
- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Spinach - 50 grams, fresh
Steps
- In a medium pot, bring the water to a boil over medium heat.
- Add the gochujang and soy sauce to the boiling water, stirring until dissolved.
- Add the minced garlic, sliced zucchini, julienned carrot, and sliced mushrooms to the pot. Cook for 10 minutes until the vegetables are tender.
- Gently add the diced tofu and fresh spinach to the stew. Simmer for an additional 5 minutes until the spinach wilts and the tofu is heated through.
- Drizzle sesame oil over the stew and stir in the chopped green onions just before serving.
- Serve hot, accompanied by steamed rice or as is for a lighter meal.
