- Chicken breast, diced - 200 grams
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Carrot, julienned - 1 medium
- Red bell pepper, sliced - 1 medium
- Green onions, chopped - 2 stalks
- Spinach - 100 grams
- Sesame seeds - 1 tablespoon
- Water - 0.5 liters
Steps
- In a medium bowl, combine the diced chicken, gochujang, soy sauce, sesame oil, minced garlic, and ginger. Mix well and let it marinate for about 10 minutes.
- While the chicken is marinating, prepare the vegetables. Slice the carrot and red bell pepper, chop the green onions, and wash the spinach.
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until the chicken is cooked through and slightly caramelized.
- Add the carrots and red bell pepper to the skillet with the chicken, cooking for another 3-4 minutes until the vegetables are just tender.
- Finally, stir in the spinach and cook until wilted, about 1-2 minutes.
- To serve, place a portion of cooked rice in each bowl, top with the chicken and vegetable mixture, and garnish with chopped green onions and sesame seeds.
