Ingredients

  • Cooked white rice - 200 grams
  • Chicken breast, diced - 200 grams
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Carrot, julienned - 1 medium
  • Red bell pepper, sliced - 1 medium
  • Green onions, chopped - 2 stalks
  • Spinach - 100 grams
  • Sesame seeds - 1 tablespoon
  • Water - 0.5 liters

Steps

  1. In a medium bowl, combine the diced chicken, gochujang, soy sauce, sesame oil, minced garlic, and ginger. Mix well and let it marinate for about 10 minutes.
  2. While the chicken is marinating, prepare the vegetables. Slice the carrot and red bell pepper, chop the green onions, and wash the spinach.
  3. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until the chicken is cooked through and slightly caramelized.
  4. Add the carrots and red bell pepper to the skillet with the chicken, cooking for another 3-4 minutes until the vegetables are just tender.
  5. Finally, stir in the spinach and cook until wilted, about 1-2 minutes.
  6. To serve, place a portion of cooked rice in each bowl, top with the chicken and vegetable mixture, and garnish with chopped green onions and sesame seeds.
