Ingredients

  • Brown rice - 150 grams
  • Water - 300 milliliters
  • Gochujang - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Bell pepper - 1 small, diced
  • Spinach - 50 grams, chopped
  • Green onion - 2 stalks, sliced
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the rinsed brown rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes or until water is absorbed and rice is tender.
  3. While the rice is cooking, heat a non-stick skillet over medium heat and add sesame oil.
  4. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the diced carrot, zucchini, and bell pepper to the skillet and stir-fry for about 5-7 minutes until the vegetables are tender.
  6. Stir in the chopped spinach and cook for an additional 2 minutes until wilted.
  7. Once the rice is done, fluff it with a fork and add it to the skillet with the sautéed vegetables.
  8. Add gochujang, soy sauce, and mix thoroughly until the rice and vegetables are evenly coated. Season with salt and pepper to taste.
  9. Serve hot, garnished with sliced green onions and sesame seeds.
