- Spinach - 100 grams, fresh

Steps
- Cook the rice noodles according to package instructions until al dente, drain, and set aside.
- In a large pan, heat the sesame oil over medium heat, then add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the sliced bell pepper and julienned carrot to the pan, cooking for 3-4 minutes until they begin to soften.
- Stir in the gochujang and soy sauce, mixing well to coat the vegetables.
- Pour in the vegetable broth and bring to a simmer, allowing the mixture to cook for another 3-4 minutes.
- Add the cooked rice noodles and fresh spinach to the pan, tossing everything together until the spinach wilts and the noodles are heated through, about 2 minutes.
- Remove from heat, garnish with sliced green onions and sesame seeds before serving.
