Ingredients
- Brown lentils - 150 grams
- Water - 500 ml
- Gochujang (Korean chili paste) - 2 tablespoons
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Green onions (chopped) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Breadcrumbs - 50 grams
- Olive oil - 2 tablespoons (for cooking)

- Cucumber (sliced) - 1 small
- Mayonnaise - 2 tablespoons (optional)

Steps
- Rinse the brown lentils under cold water and drain them.
- In a pot, combine the lentils and water, and bring to a boil. Reduce heat and simmer for about 20-25 minutes or until tender. Drain any excess water and let cool slightly.
- In a mixing bowl, mash the cooked lentils with a fork or potato masher until slightly chunky.
- Add gochujang, minced garlic, grated ginger, chopped green onions, soy sauce, sesame oil, and breadcrumbs to the mashed lentils. Mix well until combined.
- Form the mixture into two equal-sized patties.
- In a skillet, heat olive oil over medium heat. Cook the patties for 5-7 minutes on each side, or until golden brown and heated through.
- Toast the burger buns in the same skillet for 1-2 minutes until lightly browned.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the lentil patty, sliced tomato, and cucumber. Add mayonnaise if desired.
- Sprinkle with sesame seeds and serve immediately.
