Ingredients

  • Brown lentils - 150 grams
  • Water - 500 ml
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Green onions (chopped) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Breadcrumbs - 50 grams
  • Olive oil - 2 tablespoons (for cooking)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato (sliced) - 1 medium
  • Cucumber (sliced) - 1 small
  • Mayonnaise - 2 tablespoons (optional)
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Rinse the brown lentils under cold water and drain them.
  2. In a pot, combine the lentils and water, and bring to a boil. Reduce heat and simmer for about 20-25 minutes or until tender. Drain any excess water and let cool slightly.
  3. In a mixing bowl, mash the cooked lentils with a fork or potato masher until slightly chunky.
  4. Add gochujang, minced garlic, grated ginger, chopped green onions, soy sauce, sesame oil, and breadcrumbs to the mashed lentils. Mix well until combined.
  5. Form the mixture into two equal-sized patties.
  6. In a skillet, heat olive oil over medium heat. Cook the patties for 5-7 minutes on each side, or until golden brown and heated through.
  7. Toast the burger buns in the same skillet for 1-2 minutes until lightly browned.
  8. Assemble the burgers by placing a lettuce leaf on each bun, followed by the lentil patty, sliced tomato, and cucumber. Add mayonnaise if desired.
  9. Sprinkle with sesame seeds and serve immediately.
