- Tofu (firm) - 150 grams, diced
- Zucchini - 100 grams, diced
- Carrot - 50 grams, diced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 300 milliliters
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium pot, combine the rinsed rice and 400 milliliters of water. Bring it to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- In a separate pot, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add diced zucchini and carrot to the pot, cooking for another 3-4 minutes until slightly softened.
- Stir in the diced tofu, gochujang, soy sauce, and vegetable broth. Bring the mixture to a gentle simmer.
- Cook for 10-15 minutes, allowing the flavors to meld together. Season with salt and black pepper to taste.
- Once the stew is ready, fluff the cooked rice with a fork and serve it in bowls, topped with the gochujang jjigae and garnished with chopped green onions.
