Ingredients

  • Jasmine rice - 200 grams
  • Water - 400 milliliters
  • Gochujang (Korean red chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Tofu (firm) - 150 grams, diced
  • Zucchini - 100 grams, diced
  • Carrot - 50 grams, diced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 milliliters
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the rinsed rice and 400 milliliters of water. Bring it to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  3. In a separate pot, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add diced zucchini and carrot to the pot, cooking for another 3-4 minutes until slightly softened.
  5. Stir in the diced tofu, gochujang, soy sauce, and vegetable broth. Bring the mixture to a gentle simmer.
  6. Cook for 10-15 minutes, allowing the flavors to meld together. Season with salt and black pepper to taste.
  7. Once the stew is ready, fluff the cooked rice with a fork and serve it in bowls, topped with the gochujang jjigae and garnished with chopped green onions.
