Ingredients

  • Cooked short-grain rice - 1 cup
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Nori sheets - 2 sheets
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Spinach - 1 cup, blanched
  • Pickled radish (danmuji) - 50 grams, sliced
  • Egg - 1, beaten
  • Salt - to taste
  • Sesame seeds - 1 tablespoon

Steps

  1. Prepare the rice: Rinse 1 cup of short-grain rice under cold water until the water runs clear, then cook it according to package instructions. Once cooked, let it cool slightly.
  2. Mix the gochujang and sesame oil into the warm rice until evenly combined. Set aside to cool completely.
  3. In a small pan, heat a little oil over medium heat and scramble the beaten egg, seasoning with a pinch of salt. Cook until fully set, then remove from heat and let cool before slicing into strips.
  4. Prepare your filling: Julienne the cucumber and carrot, and blanch the spinach in boiling water for 30 seconds, then immediately transfer to an ice bath to stop cooking. Squeeze out excess water from the spinach.
  5. Lay a nori sheet shiny side down on a bamboo mat or clean surface. Spread half of the gochujang rice evenly over the nori, leaving a 2 cm gap at the top edge.
  6. Arrange the cucumber, carrot, spinach, pickled radish, and scrambled egg in a line across the rice at the bottom edge of the nori.
  7. Using the bamboo mat, roll the gimbap away from you, pressing gently but firmly as you go to keep the filling tight. Seal the edge with a little water.
  8. Repeat the process with the second nori sheet and remaining ingredients.
  9. Slice the gimbap rolls into bite-sized pieces with a sharp knife, and sprinkle with sesame seeds before serving.
