Ingredients

  • Chicken thighs - 400 grams
  • Gochujang - 3 tablespoons
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Green onions (sliced) - 2 tablespoons
  • Cauliflower rice - 200 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and lemon juice to create the marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. While the chicken marinates, heat olive oil in a skillet over medium heat. Add cauliflower rice and sauté for about 5-7 minutes until tender. Season with salt and black pepper to taste.
  5. Spread the sautéed cauliflower rice evenly in a baking dish.
  6. Place the marinated chicken thighs on top of the cauliflower rice in the baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  8. Remove from the oven and let it rest for 5 minutes before serving.
  9. Garnish with sliced green onions and sesame seeds before serving.
