- Green onions (sliced) - 2 tablespoons
- Cauliflower rice - 200 grams
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste

Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and lemon juice to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- While the chicken marinates, heat olive oil in a skillet over medium heat. Add cauliflower rice and sauté for about 5-7 minutes until tender. Season with salt and black pepper to taste.
- Spread the sautéed cauliflower rice evenly in a baking dish.
- Place the marinated chicken thighs on top of the cauliflower rice in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Remove from the oven and let it rest for 5 minutes before serving.
- Garnish with sliced green onions and sesame seeds before serving.
