Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Gochujang - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Green onions - 2, chopped
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 teaspoon, for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine gochujang, soy sauce, sesame oil, minced garlic, and grated ginger to create the marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade, stirring to coat. Let it marinate for at least 10 minutes.
  3. While the chicken is marinating, heat olive oil in a large skillet over medium heat.
  4. Add the marinated chicken to the skillet and cook for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized.
  5. In the same skillet, add sliced zucchini and bell pepper. Sauté for an additional 3-5 minutes until the vegetables are tender but still crisp.
  6. Season with salt and black pepper to taste, and stir in chopped green onions.
  7. Serve the gochujang chicken hot, garnished with sesame seeds.
