- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Olive oil - 1 tablespoon
- Sesame seeds - 1 teaspoon, for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine gochujang, soy sauce, sesame oil, minced garlic, and grated ginger to create the marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade, stirring to coat. Let it marinate for at least 10 minutes.
- While the chicken is marinating, heat olive oil in a large skillet over medium heat.
- Add the marinated chicken to the skillet and cook for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized.
- In the same skillet, add sliced zucchini and bell pepper. Sauté for an additional 3-5 minutes until the vegetables are tender but still crisp.
- Season with salt and black pepper to taste, and stir in chopped green onions.
- Serve the gochujang chicken hot, garnished with sesame seeds.
