Ingredients

  • Cooked white rice - 1 cup
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Spinach - 100 grams
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Eggs - 2 large
  • Soy sauce - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped
  • Vegetable oil - 1 tablespoon for frying
  • Salt - to taste

Steps

  1. Prepare the rice according to package instructions if not already cooked.
  2. In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the sliced mushrooms and sauté until they are tender, about 5 minutes. Remove from the pan and set aside.
  3. In the same pan, add the julienned carrot and zucchini, and sauté for about 3-4 minutes until slightly softened. Add the spinach and cook until wilted, about 2 minutes. Season with a pinch of salt and set aside.
  4. Fry the eggs sunny-side up in the same pan, cooking for about 3-4 minutes until the whites are set but the yolks remain runny.
  5. In a large bowl, layer cooked rice as the base. Arrange the sautéed vegetables and mushrooms on top of the rice in sections for a colorful presentation.
  6. Place the fried egg on top and drizzle with sesame oil and soy sauce. Add a spoonful of gochujang and sprinkle sesame seeds and green onions over the top.
  7. Serve immediately, mixing the ingredients together before eating.
