- Beef short ribs - 600 grams
- Gochujang (Korean chili paste) - 3 tablespoons
- Soy sauce (low sodium) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Erythritol or Monk fruit sweetener - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Green onions (sliced for garnish) - 2 tablespoons
Steps
- In a bowl, combine gochujang, soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, erythritol, and black pepper to create the marinade.
- Place the beef short ribs in a large ziplock bag or a shallow dish and pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight.
- Preheat your oven to 150°C (300°F).
- Remove the ribs from the marinade and place them on a baking tray lined with foil. Reserve the marinade for later use.
- Cover the ribs with another piece of foil and bake in the preheated oven for 2 hours until the ribs are tender.
- After 2 hours, remove the foil and brush the reserved marinade over the ribs. Increase the oven temperature to 200°C (400°F) and bake for an additional 15-20 minutes to caramelize the glaze.
- Once done, remove the ribs from the oven and let them rest for a few minutes. Garnish with sliced green onions before serving.
