Ingredients

  • Beef short ribs - 600 grams
  • Gochujang (Korean chili paste) - 3 tablespoons
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Erythritol or Monk fruit sweetener - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Green onions (sliced for garnish) - 2 tablespoons

Steps

  1. In a bowl, combine gochujang, soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, erythritol, and black pepper to create the marinade.
  2. Place the beef short ribs in a large ziplock bag or a shallow dish and pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight.
  3. Preheat your oven to 150°C (300°F).
  4. Remove the ribs from the marinade and place them on a baking tray lined with foil. Reserve the marinade for later use.
  5. Cover the ribs with another piece of foil and bake in the preheated oven for 2 hours until the ribs are tender.
  6. After 2 hours, remove the foil and brush the reserved marinade over the ribs. Increase the oven temperature to 200°C (400°F) and bake for an additional 15-20 minutes to caramelize the glaze.
  7. Once done, remove the ribs from the oven and let them rest for a few minutes. Garnish with sliced green onions before serving.
