Ingredients
- Brown rice - 150 grams
- Water - 300 ml
- Gochujang - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Green onions - 2, chopped
- Spinach - 100 grams, fresh
- Sesame seeds - 1 tablespoon, toasted
Steps
- Rinse the brown rice under cold water until the water runs clear. Combine the rice and 300 ml of water in a pot and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 25 minutes or until the rice is cooked and the water is absorbed.
- While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add diced carrot, bell pepper, and zucchini to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
- Stir in the fresh spinach and cook until wilted, about 2 minutes. Add the gochujang and soy sauce, mixing well to coat the vegetables.
- Once the rice is done, fluff it with a fork and add it to the skillet with the vegetable mixture. Stir well to combine all ingredients.
- Serve hot, garnished with chopped green onions and toasted sesame seeds.
