Ingredients

  • Brown rice - 150 grams
  • Water - 300 ml
  • Gochujang - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Green onions - 2, chopped
  • Spinach - 100 grams, fresh
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Rinse the brown rice under cold water until the water runs clear. Combine the rice and 300 ml of water in a pot and bring to a boil.
  2. Once boiling, reduce the heat to low, cover, and simmer for about 25 minutes or until the rice is cooked and the water is absorbed.
  3. While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add diced carrot, bell pepper, and zucchini to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes. Add the gochujang and soy sauce, mixing well to coat the vegetables.
  6. Once the rice is done, fluff it with a fork and add it to the skillet with the vegetable mixture. Stir well to combine all ingredients.
  7. Serve hot, garnished with chopped green onions and toasted sesame seeds.
