Ingredients

  • Pork belly - 300 grams, sliced into bite-sized pieces
  • Gochugaru (Korean red pepper flakes) - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2 stalks, chopped
  • Keto-friendly sweetener (like erythritol) - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cauliflower rice - 200 grams, for serving

Steps

  1. In a bowl, combine the gochugaru, soy sauce, sesame oil, minced garlic, minced ginger, keto-friendly sweetener, and black pepper to create the marinade.
  2. Add the sliced pork belly to the marinade and mix well. Let it marinate for at least 15 minutes to absorb the flavors.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Once hot, add the marinated pork belly to the skillet and cook for about 15 minutes, stirring occasionally until the pork is browned and cooked through.
  5. Add the chopped green onions to the skillet and stir for another 2 minutes.
  6. Serve the gochugaru pork over a bed of cauliflower rice, garnished with additional green onions if desired.
