- Cucumbers - 200 grams
- Carrots - 100 grams
- Radishes - 100 grams
- Gochugaru (Korean red pepper flakes) - 2 tablespoons
- Garlic - 2 cloves, minced
- Rice vinegar - 60 ml
- Soy sauce - 30 ml
- Sugar - 1 tablespoon
- Salt - 1 teaspoon
- Sesame oil - 1 teaspoon
- Sesame seeds - 1 teaspoon
Steps
- Wash and slice the cucumbers, carrots, and radishes into thin strips.
- In a large mixing bowl, combine the sliced vegetables with salt and let them sit for 10 minutes to draw out moisture.
- In a separate bowl, mix together the gochugaru, minced garlic, rice vinegar, soy sauce, sugar, and sesame oil until well combined.
- After 10 minutes, drain any excess liquid from the vegetables and add them to the gochugaru mixture.
- Toss the vegetables in the mixture until they are evenly coated.
- Transfer the pickles to a clean jar and sprinkle sesame seeds on top.
- Let the pickles marinate for at least 10 minutes before serving for best flavor.
