Ingredients

  • Cucumbers - 200 grams
  • Carrots - 100 grams
  • Radishes - 100 grams
  • Gochugaru (Korean red pepper flakes) - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Rice vinegar - 60 ml
  • Soy sauce - 30 ml
  • Sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Sesame seeds - 1 teaspoon

Steps

  1. Wash and slice the cucumbers, carrots, and radishes into thin strips.
  2. In a large mixing bowl, combine the sliced vegetables with salt and let them sit for 10 minutes to draw out moisture.
  3. In a separate bowl, mix together the gochugaru, minced garlic, rice vinegar, soy sauce, sugar, and sesame oil until well combined.
  4. After 10 minutes, drain any excess liquid from the vegetables and add them to the gochugaru mixture.
  5. Toss the vegetables in the mixture until they are evenly coated.
  6. Transfer the pickles to a clean jar and sprinkle sesame seeds on top.
  7. Let the pickles marinate for at least 10 minutes before serving for best flavor.
