Ingredients

  • Short-grain rice - 100 grams
  • Water - 800 ml
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic (minced) - 2 cloves
  • Scallions (chopped) - 2 stalks
  • Salt - to taste
  • Tofu (silken) - 100 grams
  • Sesame seeds - 1 tablespoon

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the soaked rice and place it in a pot with 800 ml of fresh water. Bring it to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and simmer for about 20 minutes, stirring occasionally, until the rice is soft and has broken down.
  4. Add the gochugaru, sesame oil, minced garlic, and salt to the porridge, stirring well to combine. Simmer for an additional 5 minutes.
  5. Meanwhile, cut the silken tofu into small cubes. Gently fold the tofu into the porridge, being careful not to break it too much.
  6. Serve the porridge hot, garnished with chopped scallions and a sprinkle of sesame seeds.
