Ingredients
- Short-grain rice - 100 grams
- Water - 800 ml
- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic (minced) - 2 cloves
- Scallions (chopped) - 2 stalks
- Salt - to taste
- Tofu (silken) - 100 grams
- Sesame seeds - 1 tablespoon
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Drain the soaked rice and place it in a pot with 800 ml of fresh water. Bring it to a boil over medium-high heat.
- Once boiling, reduce the heat to low and simmer for about 20 minutes, stirring occasionally, until the rice is soft and has broken down.
- Add the gochugaru, sesame oil, minced garlic, and salt to the porridge, stirring well to combine. Simmer for an additional 5 minutes.
- Meanwhile, cut the silken tofu into small cubes. Gently fold the tofu into the porridge, being careful not to break it too much.
- Serve the porridge hot, garnished with chopped scallions and a sprinkle of sesame seeds.
