- Vegetable broth - 500 ml
- Gochugaru (Korean red pepper flakes) - 2 tablespoons
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Tofu (firm, cubed) - 200 grams
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Zucchini - 1 small, sliced
- Carrot - 1 medium, sliced
- Spinach - 100 grams
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and ginger for 1-2 minutes until fragrant.
- Add the vegetable broth, gochugaru, soy sauce, salt, and black pepper to the pot, and bring to a simmer.
- Once simmering, add the sliced carrots and zucchini. Cook for 5 minutes until they start to soften.
- Gently add the cubed tofu and mushrooms to the pot, simmering for another 5-7 minutes.
- Finally, add the spinach and chopped green onions, cooking for an additional 2-3 minutes until the spinach wilts.
- Taste and adjust seasoning if necessary, then serve hot in bowls.
