Ingredients

  • Vegetable broth - 500 ml
  • Gochugaru (Korean red pepper flakes) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Tofu (firm, cubed) - 200 grams
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Zucchini - 1 small, sliced
  • Carrot - 1 medium, sliced
  • Spinach - 100 grams
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and ginger for 1-2 minutes until fragrant.
  2. Add the vegetable broth, gochugaru, soy sauce, salt, and black pepper to the pot, and bring to a simmer.
  3. Once simmering, add the sliced carrots and zucchini. Cook for 5 minutes until they start to soften.
  4. Gently add the cubed tofu and mushrooms to the pot, simmering for another 5-7 minutes.
  5. Finally, add the spinach and chopped green onions, cooking for an additional 2-3 minutes until the spinach wilts.
  6. Taste and adjust seasoning if necessary, then serve hot in bowls.
