Ingredients

  • Sweet potato flour - 100 grams
  • Water - 150 ml
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Green onions - 2 stalks, finely chopped
  • Zucchini - 100 grams, grated
  • Carrot - 50 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons (for frying)

Steps

  1. In a bowl, combine sweet potato flour, gochugaru, salt, black pepper, and water to create a smooth batter.
  2. Stir in the finely chopped green onions, grated zucchini, and grated carrot until well mixed.
  3. Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
  4. Pour half of the batter into the skillet, spreading it out evenly to form a pancake.
  5. Cook for about 4-5 minutes on each side or until golden brown and cooked through. Repeat with the remaining batter, adding more oil as needed.
  6. Serve the Gochu Jeon hot, cut into wedges, and enjoy!
