- Sweet potato flour - 100 grams
- Water - 150 ml
- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Green onions - 2 stalks, finely chopped
- Zucchini - 100 grams, grated
- Carrot - 50 grams, grated
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons (for frying)
Steps
- In a bowl, combine sweet potato flour, gochugaru, salt, black pepper, and water to create a smooth batter.
- Stir in the finely chopped green onions, grated zucchini, and grated carrot until well mixed.
- Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
- Pour half of the batter into the skillet, spreading it out evenly to form a pancake.
- Cook for about 4-5 minutes on each side or until golden brown and cooked through. Repeat with the remaining batter, adding more oil as needed.
- Serve the Gochu Jeon hot, cut into wedges, and enjoy!
