Ingredients

  • Cauliflower - 300 grams (1 medium head)
  • Gochujang (Korean red chili paste) - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, chopped
  • Carrot - 1 medium, grated
  • Cucumber - 1 small, diced
  • Radish - 50 grams, thinly sliced
  • Sesame seeds - 1 tablespoon
  • Fresh cilantro - a handful, chopped (optional)

Steps

  1. Remove the leaves from the cauliflower and cut it into florets. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  2. Heat sesame oil in a large non-stick skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the processed cauliflower rice to the skillet and stir-fry for 5-7 minutes until tender.
  4. Stir in the gochujang and coconut aminos, mixing well to ensure the cauliflower is coated evenly. Cook for another 2-3 minutes.
  5. Remove the skillet from heat and fold in chopped green onions, grated carrot, diced cucumber, and sliced radish.
  6. Transfer the gochu jang bap to serving bowls and sprinkle with sesame seeds and fresh cilantro if desired.
  7. Serve warm and enjoy your healthy Paleo Korean snack!
