  • Water - 50 ml
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Sesame seeds - 2 tablespoons
  • Red bean paste - 100 grams (optional)

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish.
  2. In a mixing bowl, combine sweet rice flour, sugar, baking powder, and salt.
  3. In another bowl, mix coconut milk, water, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
  5. If using, fold in the red bean paste gently until evenly distributed.
  6. Pour the batter into the greased baking dish, smoothing the top with a spatula.
  7. Sprinkle sesame seeds evenly over the top.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden and a toothpick inserted comes out clean.
