Ingredients

  • Gluten-free all-purpose flour - 200g
  • Warm water - 150ml
  • Instant yeast - 5g
  • Sugar - 20g
  • Salt - 1/2 tsp
  • Coconut oil - 2 tbsp (melted)
  • Brown sugar - 50g (for filling)
  • Cinnamon - 1 tsp (for filling)
  • Chopped walnuts or pecans - 30g (for filling)
  • Vanilla extract - 1/2 tsp (for filling)

Steps

  1. In a mixing bowl, combine gluten-free flour, instant yeast, sugar, and salt.
  2. Gradually add warm water and melted coconut oil, mixing until a soft dough forms.
  3. Knead the dough for about 5 minutes until smooth, then cover it with a damp cloth and let it rise in a warm place for 20-30 minutes.
  4. While the dough is rising, prepare the filling by mixing brown sugar, cinnamon, chopped nuts, and vanilla extract in a small bowl.
  5. After the dough has risen, divide it into 4 equal portions and flatten each portion into a disc.
  6. Place a spoonful of the filling in the center of each disc, then fold the edges over to seal, shaping it into a ball.
  7. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  8. Place the filled balls on the baking sheet, seam side down, and let them rest for another 10 minutes.
  9. Bake in the preheated oven for 15-20 minutes or until golden brown, flipping them halfway through for even cooking.
  10. Remove from the oven and allow to cool slightly before serving warm.
