Ingredients
- Gluten-free all-purpose flour - 200g
- Warm water - 150ml
- Instant yeast - 5g
- Sugar - 20g
- Salt - 1/2 tsp
- Coconut oil - 2 tbsp (melted)
- Brown sugar - 50g (for filling)
- Cinnamon - 1 tsp (for filling)
- Chopped walnuts or pecans - 30g (for filling)
- Vanilla extract - 1/2 tsp (for filling)
Steps
- In a mixing bowl, combine gluten-free flour, instant yeast, sugar, and salt.
- Gradually add warm water and melted coconut oil, mixing until a soft dough forms.
- Knead the dough for about 5 minutes until smooth, then cover it with a damp cloth and let it rise in a warm place for 20-30 minutes.
- While the dough is rising, prepare the filling by mixing brown sugar, cinnamon, chopped nuts, and vanilla extract in a small bowl.
- After the dough has risen, divide it into 4 equal portions and flatten each portion into a disc.
- Place a spoonful of the filling in the center of each disc, then fold the edges over to seal, shaping it into a ball.
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Place the filled balls on the baking sheet, seam side down, and let them rest for another 10 minutes.
- Bake in the preheated oven for 15-20 minutes or until golden brown, flipping them halfway through for even cooking.
- Remove from the oven and allow to cool slightly before serving warm.
