Ingredients

  • Gluten-free all-purpose flour - 100 grams
  • Cocoa powder - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Unsalted butter - 50 grams, softened
  • Brown sugar - 75 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Marshmallow fluff - 50 grams
  • Dark chocolate - 100 grams, for coating

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt until well combined.
  3. In another bowl, cream the softened butter and brown sugar together until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Scoop out about 1 tablespoon of dough and roll it into a ball. Place it on the prepared baking sheet and flatten it gently with your hand. Repeat for the remaining dough, spacing the cookies about 5 cm apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are set. Remove from the oven and let cool completely.
  8. Once the cookies are cool, spread a generous amount of marshmallow fluff on the bottom of one cookie and top it with another cookie to make a sandwich.
  9. Melt the dark chocolate in a microwave or double boiler until smooth. Dip each cookie sandwich into the melted chocolate, ensuring it's fully coated.
  10. Place the coated choco pies back on the parchment paper and refrigerate for about 15-20 minutes to set the chocolate before serving.
