Ingredients
- Whole chicken (about 800g) - 1
- Ginseng (dried or fresh) - 20g
- Garlic - 6 cloves
- Jujube (dried red dates) - 6 pieces
- Ginger (fresh) - 10g
- Green onion - 2 stalks
- Water - 1.5 liters
- Salt - to taste
- Black pepper - to taste
- Sesame oil - 1 tablespoon
Steps
- Rinse the whole chicken under cold water and remove any excess fat.
- Stuff the cavity of the chicken with 3 cloves of garlic, ginseng, jujube, and half of the ginger.
- In a large pot, add the stuffed chicken and pour in 1.5 liters of water.
- Add the remaining garlic, ginger slices, and one stalk of chopped green onion to the pot.
- Bring the pot to a boil over medium-high heat, then reduce to a simmer and cover.
- Let it simmer for about 60-70 minutes, or until the chicken is tender and cooked through.
- Once cooked, remove the chicken and let it rest for a few minutes before cutting it into serving pieces.
- Return the chicken pieces to the pot, season with salt and black pepper to taste, and drizzle with sesame oil.
- Serve hot, garnished with the remaining chopped green onion.
