Ingredients

  • Whole chicken (about 800g) - 1
  • Ginseng (dried or fresh) - 20g
  • Garlic - 6 cloves
  • Jujube (dried red dates) - 6 pieces
  • Ginger (fresh) - 10g
  • Green onion - 2 stalks
  • Water - 1.5 liters
  • Salt - to taste
  • Black pepper - to taste
  • Sesame oil - 1 tablespoon

Steps

  1. Rinse the whole chicken under cold water and remove any excess fat.
  2. Stuff the cavity of the chicken with 3 cloves of garlic, ginseng, jujube, and half of the ginger.
  3. In a large pot, add the stuffed chicken and pour in 1.5 liters of water.
  4. Add the remaining garlic, ginger slices, and one stalk of chopped green onion to the pot.
  5. Bring the pot to a boil over medium-high heat, then reduce to a simmer and cover.
  6. Let it simmer for about 60-70 minutes, or until the chicken is tender and cooked through.
  7. Once cooked, remove the chicken and let it rest for a few minutes before cutting it into serving pieces.
  8. Return the chicken pieces to the pot, season with salt and black pepper to taste, and drizzle with sesame oil.
  9. Serve hot, garnished with the remaining chopped green onion.
