Ingredients

  • Cooked short-grain rice - 1 cup
  • Sesame oil - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Cooked chicken breast, shredded - 100 grams
  • Eggs - 2 large
  • Spinach, blanched - 50 grams
  • Carrot, julienned - 1 small
  • Cucumber, julienned - 1 small
  • Pickled radish (danmuji) - 4 strips
  • Nori sheets - 2 sheets
  • Soy sauce - 1 tablespoon
  • Sesame seeds - 1 teaspoon

Steps

  1. In a bowl, combine the cooked rice with sesame oil and salt, mixing well to ensure the rice is flavored.
  2. In a pan, scramble the eggs over medium heat until fully cooked, then remove from heat and let them cool before slicing into thin strips.
  3. Prepare the vegetables: blanch the spinach in boiling water for 30 seconds, then cool in ice water and squeeze out excess water. Julienne the carrot and cucumber.
  4. On a bamboo mat, place one sheet of nori shiny side down. Spread 1/2 cup of the seasoned rice evenly over the nori, leaving about 2 inches at the top edge.
  5. Layer the shredded chicken, scrambled eggs, spinach, carrot, cucumber, and pickled radish along the center of the rice.
  6. Using the bamboo mat, carefully roll the gimbap away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.
  7. Repeat the process with the second nori sheet and remaining ingredients.
  8. Using a sharp knife, slice the gimbap rolls into bite-sized pieces and sprinkle sesame seeds on top. Serve with soy sauce on the side.
