Ingredients

  • Beef short ribs - 500 grams
  • Cauliflower - 300 grams (riced)
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Green onions - 2, chopped
  • Carrots - 1 medium, sliced
  • Mushrooms - 100 grams, sliced
  • Water - 1 liter
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Cilantro - for garnish (optional)

Steps

  1. In a large pot, combine the beef short ribs, water, garlic, ginger, and salt. Bring to a boil over high heat.
  2. Reduce the heat to medium-low and skim off any foam that rises to the surface. Cover and simmer for about 60 minutes, or until the beef is tender.
  3. Add the sliced carrots and mushrooms to the pot. Continue to simmer for an additional 15-20 minutes, until the vegetables are tender.
  4. While the broth is simmering, prepare the cauliflower rice by ricing the cauliflower using a food processor or grater. Sauté the riced cauliflower in sesame oil over medium heat for about 5-7 minutes, until slightly golden and tender.
  5. Once the beef is cooked, remove the short ribs from the pot and shred the meat from the bones, discarding any excess fat.
  6. Return the shredded beef to the pot, add the chopped green onions, and season with black pepper. Stir to combine and heat through for another 5 minutes.
  7. To serve, place a portion of the sautéed cauliflower rice in a bowl and ladle the galbitang broth with beef and vegetables over it. Garnish with cilantro if desired.
