Ingredients

  • Beef short ribs - 500 grams
  • Water - 1.5 liters
  • Daikon radish - 100 grams, sliced
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, sliced
  • Onion - 1 medium, quartered
  • Soy sauce - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Carrot - 1 medium, sliced
  • Mushrooms (shiitake or enoki) - 100 grams, sliced

Steps

  1. In a large pot, add the beef short ribs and cover with water. Bring to a boil and simmer for 10 minutes to remove impurities. Drain and rinse the ribs.
  2. Return the cleaned ribs to the pot and add 1.5 liters of fresh water, daikon radish, garlic, ginger, and onion. Bring to a boil and then reduce to a simmer.
  3. Cook for about 1.5 hours until the meat is tender, skimming off any foam that rises to the surface.
  4. After 1.5 hours, add soy sauce, salt, black pepper, carrots, and mushrooms to the pot. Continue to simmer for an additional 15-20 minutes.
  5. Taste and adjust seasoning if necessary. Remove from heat and stir in sesame oil.
  6. Serve hot, garnished with chopped green onions.
