Ingredients
- Beef short ribs - 500 grams
- Water - 1.5 liters
- Daikon radish - 100 grams, sliced
- Garlic - 4 cloves, minced
- Ginger - 1 inch, sliced
- Onion - 1 medium, quartered
- Soy sauce - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green onions - 2, chopped
- Sesame oil - 1 tablespoon
- Carrot - 1 medium, sliced
- Mushrooms (shiitake or enoki) - 100 grams, sliced
Steps
- In a large pot, add the beef short ribs and cover with water. Bring to a boil and simmer for 10 minutes to remove impurities. Drain and rinse the ribs.
- Return the cleaned ribs to the pot and add 1.5 liters of fresh water, daikon radish, garlic, ginger, and onion. Bring to a boil and then reduce to a simmer.
- Cook for about 1.5 hours until the meat is tender, skimming off any foam that rises to the surface.
- After 1.5 hours, add soy sauce, salt, black pepper, carrots, and mushrooms to the pot. Continue to simmer for an additional 15-20 minutes.
- Taste and adjust seasoning if necessary. Remove from heat and stir in sesame oil.
- Serve hot, garnished with chopped green onions.
