Ingredients

  • Beef short ribs - 500 grams
  • Carrots - 1 medium, sliced
  • Daikon radish - 100 grams, sliced
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Coconut aminos - 4 tablespoons
  • Sesame oil - 1 tablespoon
  • Beef broth - 250 ml
  • Green onions - 2, chopped
  • Black pepper - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste

Steps

  1. In a large pot, heat sesame oil over medium heat and add the chopped onion, cooking until translucent.
  2. Add the minced garlic and ginger to the pot and sauté for another minute until fragrant.
  3. Place the beef short ribs in the pot, browning them on all sides for about 5-7 minutes.
  4. Stir in the coconut aminos, beef broth, black pepper, and red pepper flakes, ensuring the ribs are well-coated.
  5. Add the sliced carrots and daikon radish to the pot, then bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1.5 hours until the beef is tender.
  7. During the last 10 minutes of cooking, add the chopped green onions and adjust salt to taste.
  8. Serve hot and enjoy your Paleo Galbijjim!
