Ingredients

  • Beef short ribs - 400 grams
  • Soy sauce - 60 ml
  • Brown sugar - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Sesame oil - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Rice - 1 cup (uncooked)
  • Water - 2 cups
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. In a bowl, mix soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, and black pepper to create the marinade.
  2. Add the beef short ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to overnight for better flavor).
  3. While the beef is marinating, rinse the rice under cold water until the water runs clear. Drain well.
  4. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over medium-high heat.
  5. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.
  6. While the rice is resting, heat a grill pan or skillet over medium-high heat. Remove the beef from the marinade and grill for about 5-7 minutes on each side, or until cooked to your desired doneness.
  7. Once the beef is cooked, let it rest for a few minutes before slicing into bite-sized pieces.
  8. To serve, scoop the rice into bowls, top with the sliced galbi, and garnish with chopped green onions and sesame seeds.
