- Beef short ribs - 500 grams
- Soy sauce - 60 ml
- Water - 500 ml
- Mirin - 30 ml
- Brown sugar - 2 tablespoons
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, minced
- Scallions - 2, chopped
- Carrot - 1 medium, sliced
- Daikon radish - 100 grams, sliced
- Sesame oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Sesame seeds - 1 tablespoon, for garnish
Steps
- In a large bowl, combine the soy sauce, mirin, brown sugar, minced garlic, minced ginger, and black pepper to create the marinade.
- Add the beef short ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
- In a large pot, heat the sesame oil over medium heat. Add the marinated short ribs and sear them on all sides for about 5-7 minutes.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low and cover the pot.
- Simmer for 1 hour, occasionally skimming off any foam that rises to the surface.
- After 1 hour, add the sliced carrot and daikon radish to the pot. Cover and continue to simmer for another 30 minutes, or until the meat is tender.
- Once done, garnish with chopped scallions and sesame seeds before serving.
