Ingredients

  • Beef short ribs - 500 grams
  • Soy sauce - 60 ml
  • Water - 500 ml
  • Mirin - 30 ml
  • Brown sugar - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Scallions - 2, chopped
  • Carrot - 1 medium, sliced
  • Daikon radish - 100 grams, sliced
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. In a large bowl, combine the soy sauce, mirin, brown sugar, minced garlic, minced ginger, and black pepper to create the marinade.
  2. Add the beef short ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. In a large pot, heat the sesame oil over medium heat. Add the marinated short ribs and sear them on all sides for about 5-7 minutes.
  4. Pour in the water and bring to a boil. Once boiling, reduce the heat to low and cover the pot.
  5. Simmer for 1 hour, occasionally skimming off any foam that rises to the surface.
  6. After 1 hour, add the sliced carrot and daikon radish to the pot. Cover and continue to simmer for another 30 minutes, or until the meat is tender.
  7. Once done, garnish with chopped scallions and sesame seeds before serving.
